GLUTEN FREE BANANA BREAD
This recipe is one of my absolute favourites! It is so easy to make and is absolutely delicious. Top tip: eat while it is fresh out of the oven, slightly cooled with butter. I’m getting hungry just thinking about it!
INGREDIENTS
125G BUTTER, SOFTENED
2 EGGS
1 CUP BROWN SUGAR
1 TEASPOON VANILLA EXTRACT
2 CUPS MASHED BANANA
1¾ CUPS PLAIN GF FLOUR, SIFTED
1 TEASPOON GROUND CINNAMON
1 TEASPOON BAKING POWDER, SIFTED
⅓ CUP GOLDEN SYRUP
METHOD
1. Preheat oven to 160°C. Place the sugar, butter and vanilla extract into a bowl and beat with an electric mixer for 8 minutes or until mixture is smooth and creamy.
2. Add in the eggs and beat until mixture is well combined. Then add the banana, flour baking powder, cinnamon, golden syrup and stir to combine.
3. Now spoon the mixture into the lined loaf tin. Bake for 60 minutes or until golden brown, tested with a skewer.
4. Allow banana bread to cool in the tin for 10minutes before turning out onto a rack to cool and enjoy!
VEGAN CASHEW & CACAO BLISS BALLS
These bliss balls are the perfect snack for when you’re on the go or have a chocolate craving! They are super yummy and only take roughly 10minutes to make. Not only are these bliss balls vegan but they are also gluten free! Did you also know that raw cacao powder is a super food? It’s jam-packed with magnesium, iron, calcium, and it’s full of antioxidants which has various health benefits. I hope you all enjoy this delicious snack!
INGREDIENTS
1 CUP CHOPPED ORGANIC ALMONDS
8 PITTED DATES
2 TABLESPOONS RAW CACAO POWDER
1 TEASPOON VANILLA EXTRACT
1/2 CUP SHREDDED UNSWEETEND COCONUT
1 TEASPOON MAYPLE SYRUP
METHOD
1. Combine cashews, dates, cacao powder and vanilla extract in a bowl and blend together in a food processor. Whilst blending, slowly add in the agave syrup.
2. Roll the mixture into small balls and then roll them in a bowl with the coconut. Place in the fridge until mixture has hardened.
Yep, it's that easy!
CINAMMON ALMOND BUTTER GRANOLA
This granola recipe is light, delicious and is the perfect addition to a smoothie bowl or simply with some almond milk and yoghurt! It is quick and easy and keeps for weeks!
INGREDIENTS
1/2 CUP HONEY
1/3 CUP COCONUT OIL
1/3 CUP ALMOND BUTTER
3 CUPS ROLLED OATS
3/4 CUP UNSWEETENED SHREDDED COCONUT
1 1/2 CUPS SLICED RAW ALMONDS
2 TEASPOONS GROUND CINNAMON
METHOD
1. Preheat oven to 160 degrees celsius. Set out 1-2 baking trays with baking paper on top.
2. Next, place the coconut oil. Honey and almond butter into a small saucepan on a low heat. Cook until the coconut oil has melted and the mixture is warmed through (roughly 3-4 minutes)
3. Grab a large mixing bowl and add the oats, coconut, cinnamon and almonds. Stir until combined.
4. Pour the almond butter mixture over the oat mixture. Stir until thoroughly combined.
5. Spread a thing layer over the baking sheet(s)
6. Place into the oven, stirring every 10 minutes, until mixture is lightly golden, this will take approximately 25-30 minutes.
7. Once cooked, leave granola on the baking sheet and allow to cool.
